Just come back from an amazing weekend away but after a weekend of indulgence and a lot… and I mean A LOT… of naughty treats (#sorrynotsorry) John and I were craving something healthy, nutritious but also easy so we can just crack on and eat!
So here is my recipe for a really quick and easy pasta sauce which will tick all those boxes above!
How long is this going to take?
30 mins max! And 20 of those are for cooking the sauce through and the pasta, so really no longer than a ready meal that you may pick up!
The following recipe will feed 2 adults and will leave enough for 1 portion for your little one too! Well, depending on how much you eat!
What do I need?
- 1 x courgette sliced and diced
- 1 x can of chopped tomatoes
- 6 x sun dried tomatoes sliced and diced
- 3-6 x mushrooms sliced and diced
- 1/2 teaspoon of lazy chillies (optional)
- Handful of cheese (optional)
- 2 x cups of brown pasta
How to make?
Bung all sauce ingredients into a saucepan and cook through until soft (approx 20 mins).
Put the pasta into another saucepan with boiling water and cook through. If you use brown pasta this should take 15-20 mins.
When it is all cooked, portion out and add the cheese on top if you want!
