Squash spaghetti and meatballs

I never made meatballs before tonight and to try something else new I also made some squash spaghetti! The amazing thing with squash is that when you bake it you can then shred it and it looks like spaghetti! 

The following recipe takes about 1hr from start to end (including cooking).


  • 1 x squash
  • 1 x pack of mozzarella


  • 2 x packs of pork mince
  • 2 x onion chopped and diced
  • 1 x garlic clove
  • Mixed herbs
  • 1 x egg

Tomato sauce

  • 2 x canned tomatoes
  • 1 x courgette grated
  • 1 x red pepper
  • 1 x onion
  • 1 x garlic clove

How to prepare:

First we will prepare the squash:

  • Cut the squash in half and de-seed
  • Put into the baking tray, cover with oil and cover with foil
  • Put into the oven on 180 and bake for 40 mins

Then let’s start on the meatballs:

  • Cook the onion and garlic until they are soft; then put aside to cool
  • Put the mince into a separate bowl with the egg, herbs and cooled onion and garlic
  • Roll the mince into balls
  • Put into the fridge to cool until the sauce has been made

Then bung all the ingredients for the sauce in a saucepan and simmer for 30 mins. Once that is simmering;  cook the meatballs by frying them for about 10 mins until they are cooked through. When they are cooked put them in a baking dish and put on the side until the sauce is cooked

How to bring everything together at the end: 

  • After the tomato sauce is ready pour the sauce over the meatballs in the baking dish
  • Slice the mozzarella and lay on top of the meatballs and cook in the oven for 10 mins on 180
  • Take the squash out the oven and run the fork through the squash flesh – it will look like stringy spaghetti
  • Side with salad or some other veggies and enjoy!
