Healthy, no nuts, Mini mac muffins

I am so impressed with this recipe from Training for Chocolate:

It is not only so easy to make but it is also nut free and also banana free if you so choose! The nut element is especially important as my son is allergic to peanuts and so it’s always great to find snacks that Rupert can enjoy too! 

So here is exactly what I used for the muffins today – but on the following link Training for chocolate there are lots of details about different options you can use!

Things to know:

It takes about 10 mins to prepare and about 20 mins to cook

It’s important to know that you can actually change a lot of this recipe around depending on what type of fruit, flour, liquid and oil you want to use. Today I used 2 kiwis, 1 banana and some raisins but you can literally use anything! I also want to try and cut down on the coconut oil I use as it is so high in saturated fat! 

So anyway, here’s what you need: 


  • 1 x egg
  • 2 x cups of fruit (dried/fresh) 
  • 2 x cup of flour
  • 1 x cup of liquid (I used milk)
  • 2 x tbsp of oil (I used olive oil)
  • 1 tsp bi carb of soda
  • 1 tsp of vanilla essence
  • 1 tsp of cinamon 

Literally bung all this into a bowl and mix together until it is the consistency of normal cake batter – you may have to add more milk/ liquid if the consistency is too thick. 

Spoon into cake cases. 

Heat the oven to 180 degrees and put them in for 20 mins.
